Ingredients

 
1 cup rice flour
 
1/2 cup soya flour
 
2 tbsp. tapioca
 
2 tsp. cereal free baking powder
 
2 medium size ripe bananas
 
4 tbsp. Planters Peanut Oil
 
3/4 cup sugar
 
1/4 tsp. salt
 
2 eggs
 
3/4 cup chopped walnuts

Directions

Preheat oven to 350°.
Mix rice flower, soya flour, tapioca and baking powder in a bowl.
In a blender, mix bananas with oil, sugar, salt and eggs.
Combine this mixture with dry ingredients.
Mix until just blended.
Turn into a loaf pan 8" x 4" which has been well oiled.
Bake at 350° for 1 hour.
Walnuts may be added if desired.
