Albondigas Recipe
Ingredients
| Beef | 1 Pound, minced | |
| Eggs | 2 | |
| Onions | 1 Large | |
| Bread Soaked in Milk and Squeezed- 2 tablespoons | ||
| Salt | 1 To taste | |
| Parsley | 1 Tablespoon, chopped | |
| Pepper | 1/2 Teaspoon | |
| Nutmeg | 1/2 Teaspoon | |
| Cheese | 2 Tablespoon, grated | |
| Flour | 1 Tablespoon | |
| Oil | 1 Tablespoon (Sauce) | |
| Carrots | 1 , chopped (Sauce) | |
| Onion | 1 , chopped (Sauce) | |
| Tomatoes | 1 , peeled (Sauce) | |
| Salt | 1 To taste (Sauce) | |
| Pepper | 1 To taste (Sauce) | |
| Stock- as required | ||
| Thyme- as required | ||
Directions
GETTING READY
1) In a non-stick pan, heat oil and onions.
2) In a bowl, mix together meat, bread, parsley, pepper, nutmeg, cheese and cooked onions and bind well with the eggs.
MAKING
3) Using a tablespoon of the meat mixture, make balls of about 1-inch and lightly roll in the flour.
4) In a non-stick pan, saute chopped onion, tomatoes, thyme, carrots, stock, salt and pepper.
5) Put the meatballs in the tomato sauce, Put the lid and simmer for about half-an-hour.
SERVING
6) Serve hot garnished with chopped parsley, with plain rice or mash potatoes if desired.
