Albacore With Lemon Butter Recipe
Ingredients
| Albacore steaks | 6 (Skin Removed) | |
| Bacon strip | 6 | |
| Butter/Margarine | 1⁄4 Pound | |
| Garlic | 1 Clove (5 gm) (Minced / Pressed) | |
| Lemon juice | 1⁄4 Cup (4 tbs) | |
| Chopped parsley | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Wipe fish with damp cloth.
Remove bone and dark-colored meat from steaks with a sharp knife; push steaks back into shape with fingers.
Wrap a strip of bacon around circumference of each and secure with a wgoden pick.
In a small pan, melt butter and add garlic, lemon juice, and parsley; set aside.
Place steaks on well-greased grill 4 to 6 inches above a solid bed of low-glowing coals.
Cook, turning once and basting frequently with lemon butter, until fish is browned and flakes readily when prodded with a fork.
For a 1-inch-thick piece of fish, measured in thickest portion, allow 10 minutes.
Transfer to a warm serving platter; sprinkle with salt and pepper to taste.
