6 oz. sashimi grade, Albacore tuna, diced
 
1/3 of a whole Windset Farms™ Fresco™ Seeedless Cucumber, diced
 
2-inch piece daikon, peeled and diced
 
2 Tbsp. fresh cilantro, finely chopped
 
1/2 Tbsp. fresh lime juice
 
1/4 tsp. kosher salt
 
Togarashi, to taste**
 
1 cup mixed baby greens
 
Dressing
 
4 Tbsp. Mirin**
 
2 Tbsp. rice vinegar
 
2 Tbsp. soy sauce
 
1 Tbsp. Dijon mustard
 
3 Tbsp. extra virgin olive oil
 
6 Tbsp. canola oil
 
1/2 tsp. sesame oil**
 
2 Tbsp. fresh lime juice
 
1/2 tsp. kosher salt

Directions

Whisk together dressing ingredients.
Toss tuna, Fresco™ cucumber, daikon, cilantro, lime juice and salt together. Add the dressing, to taste and season with Togarashi.
Divide mixed greens between 4 plates and top with cucumber salad. Serve with crusty bread.
