Alaska Surprise Recipe

Ingredients

 
1 package (3 oz.) Jell-O Gelatin, any red flavor
 
1 cup boiling water
 
1/2 cup cold ginger ale
 
1 package (3 oz.) Jell-O Gelatin, any red flavor
 
1 cup boiling water
 
1 pint vanilla ice cream, slightly softened
 
3 egg whites
 
6 tablespoons sugar

Directions

Dissolve 1 package gelatin in 1 cup boiling water.
Add ginger ale.
Pour into 8x4 inch loaf pan.
Chill until firm about 4 hours or overnight.
Dissolve remaining package of gelatin in 1 cup boiling water.
Add ice cream, stirring until well blended.
Chill, if necessary, until thickened.
Cut the clear gelatin into 1/2 inch cubes.
Fold into the thickened gelatin.
Pour into 8x4 inch loaf pan or 4 cup bowl or mold.
Chill until firm-about 3 hours.
Unmold onto foil lined board about 10x6 inches.
Chill.
About 1/2 hour before serving, beat egg whites until foamy throughout.
Add sugar 2 tablespoons at a time, beating thoroughly after each addition.
Continue beating until stiff, shiny peaks form.
Completely cover sides and top of loaf with meringue, being careful to seal around the base.
Place in preheated broiler until meringue is golden brown about 11/2 to 2 minutes.
