Chicory - 2 heads
 
Eggs - 2, hard boiled
 
Red peppers - 2
 
Melon - 1
 
Canned artichoke hearts - 2

Directions

GETTING READY
1 Shred the chicory.
2 Pass the hard boiled eggs through a sieve into a bowl.
3 Skin the red peppers and shred.
4 Cut the melon in half and remove the seeds.
5 Using a melon scoop, scoop out small balls from the flesh.
6 Cut the artichoke hearts into strips.

MAKING
7 On each plate, arrange a bed of chicory.
8 Sprinkle with the artichoke pieces.
9 Place the melon balls in the center.
10 Arrange the red pepper strips around the melon balls.
11 Scatter the sieved hard boiled egg on top.

SERVING
12 Serve at once.
