 Fresh raw ahi tuna - 2 1/2 cups, cubed
 White onion1/2 Cup (16 tbs), finley diced (Ahi Poki Salad :)
 Green onions1/3 Cup (16 tbs), thinly sliced (Ahi Poki Salad :)
 Sambal oleke - 3 tablespoons
 Inamona - 3/4 teaspoon
 Sesame oil1 Tablespoon (Ahi Poki Salad :)
 Salt1 To taste (Ahi Poki Salad :)
 Mixed field greens - 6 cups

Directions

MAKING
1) Lemon Grass Chili Dressing : In a bowl, stir the lime juice, soy sauce, water, sugar, fish sauce, chili sauce, lemon grass, ginger and garlic together, until the sugar is dissolved.
2) Ahi Poki Salad : In a mixing bowl, toss the tuna, onion, green onions, sambal oleke, inamona and sesame oil together.
3) Season with salt to taste.
4) In a large salad bowl, toss the mixed greens with the dressing until thoroughly coated.

SERVING
5) Mound the greens on 6 salad plates, top with the tuna and serve the Ahi Poki Salad with Lemon Grass Chili Dressing immediately.
