2 tablespoons olive oil
 
2 cloves garlic, mashed
 
1 to 3 dried red chiles
 
10 ounces cooked, peeled shrimp
 
8 ounces fresh linguine or 4 ounces dry
 
1 tablespoon shredded Asiago or Parmesan cheese

Directions

Put pasta water on to boil.
In a heavy frying pan, heat oil over medium heat.
Add garlic and chile and cook until brown, then remove and discard.
Add shrimp; reduce heat and stir to coat shrimp with oil.
Cook pasta to taste, drain quickly but do not rinse.
Toss at once with oil and shrimp.
