African Chow Mein Recipe
Ingredients
1 pound ground beef or ground chicken
1 onion, chopped
1 cup chopped celery
1 (10 ounce) can mushroom slices or pieces
1 (10-ounce) can cream of mushroom soup
1 (10-ounce) can cream of chicken soup
1/4 cup soy sauce
1 cup uncooked rice
Directions
Brown the ground beef with the onion and celery in a skillet, stirring until crumbly; drain.
Drain the mushrooms, reserving the liquid.
Combine the mushrooms, soups, soy sauce and ground beef mixture in a large bowl and mix well.
Layer half the beef mixture in a buttered 2-quart baking dish.
Sprinkle the rice evenly over the layer.
Layer the remaining beef mixture evenly over the rice.
Bake, uncovered, at 350 degrees, for 1 1/4 hours, adding some of the mushroom liquid during baking if mixture appears too dry.
