African Style Chicken Recipe
Ingredients
| 1 broiler-fryer chicken (2 to 2 1/2 pounds), cut up | ||
| 2 tablespoons peanut or other cooking oil | ||
| Onion | 1 Medium, chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Beer | 3/4 Cup (16 tbs) | |
| Peanuts | 1/3 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| Honey | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| 1/4 to 1/2 teaspoon dried ground chili pepper or chili powder | ||
| Ginger | 1/4 Teaspoon | |
| Milk cream | 3 Tablespoon | |
| Flour | 2 Tablespoon | |
| Flaked coconut | 1/4 Cup (16 tbs) | |
Directions
MAKING
1) In a heavy skillet heat oil and brown chicken in it. Keep it aside.
2) Fry onion and garlic in the skillet till golden
3) Mix beer, peanuts, lemon juice, honey, and seasonings.
4) Put chicken into skillet. Cover and cook in simmering heat for 35 to 40 minutes till tender.
5) Transfer chicken into platter and keep warm.
6) In a bowl make a paste of cream and flour, using 2 tablespoons flour per 1 cup cooking liquid. 7) Mix coconut and cook stirring constantly till thick.
8) Pour the mixture over chicken.

9) Pass some sauce to pour over rice or potatoes.
