African Plantain Chips Recipe Video

Plantains are very popular in African cuisine. There are many different ways to prepare plantain. In today’s recipe we are going to make some spicy green plantain chips. You can serve these chips as appetizers or snacks, in all cases there are so enjoyable.

Ingredients

 
Plantains - 3 green, unripe
 
Salt - 1/2 teaspoon
 
Vegetable Oil - for deep frying
 
FOR SPICE MIX:
 
Curry Powder - 1 teaspoon or to taste
 
Cayenne Pepper - 1/2 teaspoon or to taste
 
Sugar - 1 teaspoon

Directions

MAKING
1. Peel and slice the green plantains as thin as possible.
2. Soak them in water for 5 minutes to wash away the excess starch.
3. Drain the plantain from the water and season with salt.
4. Heat the vegetable oil at 350 degree F and fry the plantain until golden brown, approximately 5 minutes.
5. Remove and place in a paper towel to remove the excess oil.
6. Combine the sugar, curry powder and cayenne pepper in a small bowl and mix it together.

SERVING
7. Dust the sugar mixture on the plantain chips and serve. Enjoy!
