African Beef And Ground Nut Stew Recipe

Ingredients
2 lbs. stew beef
4 tablespoons peanut oil
3 cups water
1 1/2 cups peanut butter
2 tomatoes or 1 small can tomatoes, diced
2 onions, sliced thin
1 lb. okra or 1-10 oz. package frozen sliced
1/8 teaspoon crushed red pepper
1/2 teaspoon allspice
1 tablespoon cornstarch
1/4 cup water
Salt to taste
Directions
Brown stew beef in oil over medium high heat.
Add 1 1/2 cups water.
Cover and simmer over low heat until meat is tender (45 minutes-1 hour).
Add remaining 1 1/2 cup water and gradually stir in peanut butter.
Add tomatoes, onions, okra, crushed red pepper (if desired), allspice, and bring to a boil.
Cover and reduce heat, stirring occasionally.
Simmer 25 minutes or until onions and okra are tender.
Dissolve cornstarch in 1/4 cup water and stir into stew.
Bring to a boil and cook briefly, stirring until stew is thickened (about 5 minutes).
Salt to taste.
