Adobong Manok At Baboy Recipe
Ingredients
| 2 pounds boneless pork, cut into large cubes | ||
| Vinegar | 1 Cup (16 tbs) | |
| Garlic | 2 Clove (5gm), minced | |
| Peppercorns | 1 Teaspoon | |
| Bay Leaf | 1 | |
| Water | ||
| 1 frying chicken (3 1/2 pounds), cut into 2-inch pieces (chop through bone) | ||
| Lard for frying | ||
| Coconut milk | 1 Cup (16 tbs) | |
| Salt | To Taste | |
Directions
Combine pork, vinegar, garlic, pepper, and bay leaf.
Add 1 cup water, cover, and cook slowly for 1 hour.
Add chicken and cook for 30 minutes longer, adding more water as it becomes necessary.
When pork and chicken are tender, remove pieces from liquid and fry in lard until brown.
Return to liquid, add Coconut Milk and salt to taste, and simmer for 5 minutes.
Add 1 cup water, cover, and cook slowly for 1 hour.
