Absolute Vengeance Meatless Metal Chili Recipe Video

Olive oil

3 cloves of garlic
 
1 yellow onion
 
1 green pepper
 
1 red pepper
 
1 15oz can black beans
 
1 15oz can dark red kidney beans
 
1 15oz can diced fire roasted tomatoes w/ green chilies
 
1 4oz can fire roasted diced green chilies
 
1 28oz or two 14oz cans of stewed tomatoes
 
1 package veggie grounds - approximate 12oz
 
1 beer - Guinness draught or murphy's stout
 
14 oz. water
 
Spices
 
2 tbsp. chili powder
 
1 tsp. cumin
 
1 1/2 tsp. paprika
 
1 tsp. oregano
 
1 tbsp. salt
 
2 tsp. red pepper flakes
 
1/2 tbsp. cayenne pepper
 
2 dashes liquid smoke

Directions

Chop peppers and onion into small pieces. Heat 2 tbs. of olive oil in a large frying pan, add 3 tbs. of minced garlic then sauté the peppers and onions until soft and tender.
In a large stock pot combine all of the wet ingredients, (except the liquid smoke) the beans. Cook over medium heat stirring occasionally. Once it is warm add the peppers and onions and mix thoroughly. Add all of the spices including the liquid smoke. Heat the vegetable grounds in a frying pan over medium heat until they are heated through. Add them to the pot and cover allow to cook on simmer for 45 minutes to an hour stirring frequently.
Serve with sides of sour cream, tortilla chips and cheese.
