Abbacchio In Padella Recipe

Ingredients
Oil 2 tbsp.
Salt pork or bacon, chopped 4 oz.
Leg of lamb 4 1b.
Onion, sliced 1
Garlic cloves, chopped 2
Anchovy fillets, chopped 4
White wine 4 oz.
White wine vinegar 2 oz.
Stock or water 4 oz.
Bay leaves 2
Rosemary 2 tbsp.
Dried mint Pinch
Parsley, chopped 1 tbsp.
Directions
Heat the oil in a large pot, and cook the salt pork and lamb for 10 minutes until meat is browned all over.
Add onion and garlic and cook for another 5 minutes.
Add all the other ingredients, except the parsley, and bring to a boil, then lower the heat and simmer, covered, for 45 minutes.
When the liquid is reduced and the lamb is tender, remove the meat and slice it thinly.
Place on heated serving platter with the sauce poured over, and sprinkle with chopped parsley.
