Ingredients

 
Chinese (dried) Mushrooms- 6nos
 
Raw Pork- 1/4 pound
 
Soy Sauce- 2 tablespoons
 
Cornstarch- 2 teaspoons
 
Sugar- 1/2 teaspoon
 
Pepper- 1/4 teaspoon
 
Oil- 2 tablespoons
 
Smoked Ham- 1/4 pound, cut into juliennes
 
Abalone- 1 small can, cut into juliennes
 
Celery- 5 stalks, sliced
 
Ginger Root- 2 teaspoons, sliced
 
Boiling Water- 8 cups
 
Salt- 1 teaspoon
 
Ac'cent- 1/2 teaspoon
 
Scallion- 2 tablespoon, cut in juliennes

Directions

GETTING READY
1) Wash the mushrooms and soak in cold water for 10 minutes.
2) Drain the mushroom slice.
3) Trim off the fat from pork and cut the pork in narrow slices.

MAKING
4) In a bowl toss the pork with soy sauce, cornstarch, sugar, pepper and 1 tablespoon of oil.
5) In a saucepan heat the remaining oil, fry the ginger for 1 minute.
6) Stir in the water and bring to a boil.
7) Add the pork mixture, mushrooms, celery, ham, salt, and Ac-€™cent.
8) Cover and simmer for 15 minutes.
9) Stir in the abalone and cook for 5 minutes - don-€™t over cook over cooking will toughen the abalone.

FINALIZING
10) Serve the Abalone Soup hot garnished with scallions.
