Abalone Soup With Chinese Mushroom Recipe
Ingredients
| Chinese mushrooms | 1 , dried | |
| Raw Pork- 1/4 pound | ||
| Soy sauce | 2 Tablespoon | |
| Cornstarch | 2 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Oil | 2 Tablespoon | |
| Smoked Ham- 1/4 pound, cut into juliennes | ||
| Abalone- 1 small can, cut into juliennes | ||
| Celery- 5 stalks, sliced | ||
| Ginger root | 2 Teaspoon, sliced | |
| Boiling water | 8 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Ac'cent- 1/2 teaspoon | ||
| Scallion- 2 tablespoon, cut in juliennes | ||
Directions
GETTING READY
1) Wash the mushrooms and soak in cold water for 10 minutes.
2) Drain the mushroom slice.
3) Trim off the fat from pork and cut the pork in narrow slices.
MAKING
4) In a bowl toss the pork with soy sauce, cornstarch, sugar, pepper and 1 tablespoon of oil.
5) In a saucepan heat the remaining oil, fry the ginger for 1 minute.
6) Stir in the water and bring to a boil.
7) Add the pork mixture, mushrooms, celery, ham, salt, and Ac-€™cent.
8) Cover and simmer for 15 minutes.
9) Stir in the abalone and cook for 5 minutes - don-€™t over cook over cooking will toughen the abalone.
FINALIZING
10) Serve the Abalone Soup hot garnished with scallions.
