 Celery4 Ounce
 French Beans4 Ounce
 Pepper red4 Ounce
 Mange-tout4 Ounce
 Onion4 Ounce

 Cream3 Fluid Ounce
 Lemon1
 Gruyere cheese-4 oz (100 g)-grated

Directions

GETTING READY
1. Peel and wash the carrots
2. Cut into very fine strips
3. Cut the celery to form same size strips
4. Top and tail the beans
5. Split and seed the pepper and cut into shreds
6. Top and tail the mangetout peas
7. Slice the onion into rings

MAKING
8. Set the onion aside
9. In a pan of hot water, blanch the remaining vegetables for five minutes
10. Drain well and set aside
11. In boiling water, cook the macaroni for 12 minutes or till al dente.
12. Refresh in cold water and drain well
13. In a large pan, heat the butter
14. Add the remaining vegetables to the pan
15. Season and place these vegetables in a large pan
16. In the same saucepan, heat the butter and sauté the reserved onions for four minutes or till done.
17. Set aside

FINALIZING
18. In the same pan, add the cream and boil gently
19. Add the lemon juice and seasoning
20. Add this mixture to the vegetables
21. Layer the pasta and mix well

SERVING
22. Add the grated cheese to the mixture and stir well before serving.
