Loaded Potato Baked Casserole Recipe Video
Ingredients
Potatoes - 8 (medium), peeled and cut into equal chunks
Carnation evaporated milk - 1 cup
Sour cream - 1/2 cup
Salt - 1 teaspoon
Ground black pepper - 1/2 teaspoon
Cheddar cheese - 2 cups, shredded and divided
Bacon - 6 slices, cooked and crumbled, divided
Green onions - sliced (optional)
Directions
GETTING READY
1) Preheat oven to temperature of 350 degrees.
2) Lightly oil or butter a 3 quart casserole dish.
MAKING
1) In a pan, add the potato chunks and cover with salted water. Let the potatoes boil till they are tender. This usually takes about 30-35 minutes.
2) Drain the potatoes well and put them in a medium sized bowl. Add the Carnation milk, sour cream, salt and pepper and mash the potatoes well.
3) Add 1 1/2 cups of the shredded cheese and 1/2 of the prepared bacon (and the green onions, if using) and mix well.
4) Put the potato mixture in the casserole dish and bake in the oven for about 35 minutes.
5) Remove the dish from the oven, top with the remaining cheese and bacon (and green onion) and return to the oven. Bake for about 5 minutes.
SERVING
6) Serve the casserole while it is still piping hot. The preparation is really good for potlucks.
