A Crown Of Flounder Recipe

 Bacon strip6
 Herb package1 , seasoned
 Butter or margarine, melted
 Parsley2 Tablespoon, minced
 Onion1/4 Cup (16 tbs), minced
 6 thin flounder fillets (or any white fish)
 Mushroom Caper Sauce

Directions

Fry bacon crisp; drain; measure drippings; crumble bacon.
Prepare stuffing mix as directed on package, adding enough melted butter or margarine to bacon drippings to equal amount of moistening called for.
Stir in bacon, parsley, and onion; mix well.
Spread equal amount of stuffing on each fillet; roll up; secure with wooden toothpicks.
Place each roll-up upright in well-greased muffin cups.
Brush with additional melted butter or margarine.
Bake at 375° for 30 minutes.
If necessary, brush again with melted butter; run under broiler to brown.
