7-Grain Oatmeal Cake Recipe
Ingredients
1 cup (240 ml) Canola Oil
2 cups (480 ml) maple syrup
1 1/2 tsp (8 ml) vanilla
2 cups (480 ml)Unbleached White Flour
3/8 cup (90 ml) Low Fat Soy Flour
1/2 cup (120 ml) cold water
1/2 cup (120 ml) soy milk
1 1/2 tsp (8 ml) grated lemon rind
1 1/2 tsp (8 ml) sea salt, optional
3 egg whites
2 tsp (10 ml) cinnamon
2 tsp (10 ml) non-alum baking powder
1 cup (240 ml) cooked
7 Grain Cereal
5 cups (1.2 1) Rolled Oats
1/2 cup (120 ml) raisins, optional
1/2 cup (120 ml) chopped walnuts, or nuts of choice
Directions
Cream together oil, syrup and vanilla.
In a separate bowl, mix the 2 flours, water, milk, rind, sea salt, egg whites, cinnamon and baking powder until smooth.
Then mix the two mixtures together and add cereal, oats, raisins and nuts.
Mix well and fill oiled 9x13-inch cake pan 3/4 full.
Bake 350°F (180°C) until light golden brown.
