Salmon and Fresh Romaine Salad with Creamy Chili Dressing Recipe
Ingredients
| 1 cup mayonnaise or salad dressing | ||
| Chili Sauce | 1/4 Cup (16 tbs) | |
| Green pepper | 1/4 Cup (16 tbs), finely chopped | |
| Green onion | 1/4 Cup (16 tbs), finley chopped | |
| Lemon juice | 1 Teaspoon | |
| Whipping cream | 1/2 Cup (16 tbs) | |
| 1 large head romaine | ||
| 1 16-ounce can salmon, chilled, drained and broken into chunks | ||
| 2 tomatoes, cut in wedges | ||
| 2 hard-cooked eggs, sliced lengthwise, Snipped parsley | ||
Directions
Blend together mayonnaise, chili sauce, green pepper, green onion, and lemon juice; chill.
At serving time, whip cream just till soft peaks form; fold into mayonnaise mixture.Line salad bowl with outer leaves of romaine.
Tear up remaining romaine and place in bowl.
Place salmon chunks across center of lettuce.
Surround salmon with tomato wedges and egg slices.
Garnish with snipped parsley.
Spoon some of the dressing in center of salad.
Pass the remaining dressing.
