Bavarian Apple Sausage Muffins

Ingredients:
Unbleached flour - 1 1⁄4 Cup (20 tbs)
Rye flour - 1⁄2 Cup (8 tbs)
Brown sugar - 1 Tablespoon
Baking powder - 3 Teaspoon
Soda - 1 Teaspoon
Ground pepper - 1⁄2 Teaspoon
Allspice - 1⁄2 Teaspoon
Celery seed - 1⁄2 Teaspoon
Grated potato - 1⁄2 Cup (8 tbs) (Raw)
Diced onion - 1⁄3 Cup (5.33 tbs) (Raw)
Cider vinegar - 1 Teaspoon
Diced apples - 1 Cup (16 tbs) (Raw)
Cooked german sausage/Uncooked soy sausage - 3⁄4 Cup (12 tbs) , drained
Eggs - 2
Sherry - 1 Tablespoon
Melted butter - 3 Tablespoon
Buttermilk - 1 Cup (16 tbs)
Directions:
Mix together flour, rye flour, sugar, baking powder, soda and spices.
In a small bowl, sprinkle grated potato and onions with one teaspoon cider vinegar.
Stir grated potato, onions, chopped apples and sausages into dry ingredients.
In another bowl, whisk eggs with sherry, melted butter and buttermilk.
Make a well and add liquid ingredients, stirring not more than 10 seconds.
Batter will be lumpy.
Fill greased muffin cups with batter and bake until lightly browned.
Bake at 375 degrees 20-22 minutes
