Couscous - 250 Gram
Turmeric - 1 Teaspoon
Chicken stock cube - 1
Boiling water - 500 Milliliter
Tomatoes - 1 Cup (16 tbs) , chopped
Chickpeas - 1⁄2 Cup (8 tbs) (canned or cooked)
Parsley - 1⁄2 Cup (8 tbs) , chopped finely
Coriander - 1⁄2 Cup (8 tbs) , chopped finely
Mint - 1⁄4 Cup (4 tbs) , chopped finely
Pepper - To Taste
Olive oil - 2 Tablespoon
Sugar - 1 Pinch
Lemon - 1 , juiced
Lime - 1 , juiced
1. In a bowl, put couscous. Add turmeric and chicken stock cube. Pour boiling water. Stir to mix well. Cover and let it sit for a around 5 minutes or till all the water is absorbed.
2. Remove the lid from the couscous bowl and using fork fluff up the couscous.
3. Add all the ingredients into the bowl and mix well till combined.
4. In a serving bowl or plate, serve this salad as a complete meal.
