Bacon and Cabbage Soup

Ingredients:
1 oz. butter
1 oz. dripping or butter
1 large onion, chopped
2 tomatoes, skinned and chopped
4 oz. bacon, diced
11/4 pints good brown stock
1 medium-sized cabbage, finely shredded
Seasoning
Directions:
This is a particularly good filling winter soup.
Heat all the butter or butter and dripping and fry the chopped onion in this until golden brown, add the chopped tomatoes and bacon and cook together.
Pour in the brown stock and bring to the boil, add the finely shredded cabbage and cook fairly quickly until tender.
Season well.
This soup can be sieved if wished, but it is not necessary if the cabbage is well shredded.
Do not over-cook the cabbage, as it will lose its 'nutty' flavour.
