These are ray-like fish, which feed at the bottom. Their leathery skin and razor sharp nodes make it difficult for your chef to grab them while preparing for cooking. Moreover, since these bottom-feeding creatures carry a mother load of bacteria, a small nick or cut could result in an infection for days afterwards.
