Red Windsor
There is a very interesting process behind the manufacture of this cheese. It is made in a fashion similar to Cheddar cheese but the milk is marbelized with either a bordeaux or a blend of port and wine. You should serve it at your next Sunday brunch if you can find it at a store nearby.
