Okra, also known as lady's finger in some countries, is eaten for its green seed pods. When cooked thoroughly, the okra produces a typical "gooiness," which comes from the excretion of an edible form of soluble fibre. Some people like to reduce this gooey substance by cooking it for short period or just stir-frying it.
