Eating a cod or halibut like large fish is often a painfully disgusting process for the chef who has to clean the fish first. It is because there are common worms that line up the flesh of these fish and it is important to hunt them down before the fish is broken down into fillets. So, your chef has to go at it with a tweezer and pull out the squishy, pink worms out of the flesh of the fish.
