Wine Gravy

Wine gravy is special gravy apparently made using wine as the base ingredient. The gravy is made more particularly for different kinds of meat including sea food. The meats may be cooked in different ways and finally basted or simmered in the liquid that contains the wine gravy. The wines used for making wine gravy include red and white wines. Popular wine gravy recipe variations include- Creamy White Wine Sauce, Chicken and Red Wine Sauce and Quick Red Wine Sauce w/ Mustard & Thyme.

 

Ingredients Used and Popular Methods of Preparation of Wine gravy

The wine gravy recipe can include anything as per choice and taste to make the gravy. Herbs, spices, seasonings, meat drippings and liquids including vegetable broths can all comprise the gravy besides the wine.

Here is a typical wine gravy recipe sourced from turkey meat –

The recipe begins where the turkey has ended cooking and has been set aside. Thereafter the drippings from the pan where it was roasted are collected into a glass measuring jar. Browned pieces sticking on at the base of the roasting pan need to be retained as they can render subtle flavors to the gravy.  The drippings need to be allowed to stand to make the fat raise to the top which should be spooned out and retained. Stock can be added optionally to increase its quantity. Thereafter wine (red or white) wine should be added in the quarter volume of the reserved stock. The pan is heated over medium to which the retained fat is added. Thereafter flour is whisked in followed by collected drippings and stock. At this point any bits at the bottom of the pan are scraped off and the liquid is allowed to simmer for a few minutes until medium thick. The ready wine gravy can be seasoned with pepper and salt as per taste. The resulting gravy is strained and collected into a container.

 

 

Wines Popularly Used in Wine Gravy Recipes

Red Wine Gravy is a wine gravy variation that uses red wine. Any common red wines such as Cabernet Sauvignon, Merlot, Zinfandel, Cabernet Franc or Pinot Noir can be made use of.

Similarly white Wine Gravy is a wine gravy variation that uses white wine. Any common dry white wines such as Albarino, Chardonnay or Chenin Blanc can be made use of.
