Spring Soup is a soup which is prepared from spring vegetables which are in season only during the short period of spring. Generally asparagus is used in these soups but other spring vegetables like spinach, peas or cabbage can also be used. These vegetables are added to a broth, chowder or bisque. Spring soup is often colored with caramel and is generally light greenish in color reflecting the refreshing season of spring. It can be garnished with ginger, cilantro, lemon zest, sliced hard boiled eggs or parmesan cheese.
