History of South Indian Food:
Over the years, the South Indian Food has developed a pattern of its own, which is a lot different from the northern states of India. The History says that southern coastline had been the favorite of all major foreign invasions to India including, the Dutch, the English and the French, mainly because of the spice produce the land could boast of. The invaders had undying interest in marketing and exporting the spice reserves used in South Indian Cooking, including pepper, cinnamon, cardamom, cloves, nutmeg etc. This explains why South Indian Cuisine is always loved for irresistible aroma, flavor and more often the spiciness.
Popular South Indian Food / Recipes:
Rice is more or less the stable food in South Indian Cuisine; rice is often had boiled with or without spices and masalas as in biryani, or it is made into flour that becomes the main ingredient in most of the popular South Indian recipes for breakfast like dosa, idli, idiyappam, puttu, appam etc.
The authentic South Indian meal is seen as a treat in itself; served in a banana leaf brimming with spicy main courses like sambar, rasam, and other vegetable accompaniments like chutneys, pickles and pappadams etc and complete with Payasam, the sweet porridge; a complete South Indian meal or Sadya exudes the true essence of the elaborate and tasty South Indian cooking.
South Indian Food is also famous for its snacks. Although each of the four states has its own snack varieties, some of the most popular snacks in South Indian Cuisine include vada, adai, pazhampori, madakku etc; some of which are salty and certain others are sweet, and more often steamed or deep fried.
With the worldwide popularity, the Sweets and Desserts in South Indian Food are now the proud entries in most of the International cuisines. Payasam or pradhaman, often served at the end of the South Indian Meal or Sadhya, and other sweet varieties like Poli, Mysore pak, coconut burfi, Badam Halwa and more offer a great choice for anyone with a sweet tooth.
Widely Used Ingredients in South Indian Food:
Although the four states that constitute the South Indian Food have much in common, the very few differences in the cuisines are mostly due to the ingredients used. Apart from the variations seen in each of the four southern states, the South Indian Food also has the regional variations seen within the states.
Andhra Food:
Andhra Food is considered to be the spiciest of all. Gongura, a type of leafy vegetable found in Andhra is mostly cooked with Pappu (cooked Redgram) and forms into one of the most frequented vegetable gravy entries in Andhra meal. Various aromatic powders like Karam and several varieties of masalas too give Andhra food a distinct flavor of its own. Being a coastal region, most of the regional specialties normally uses seafood and are offered in a variety of tastes and combinations.
Karnataka Food:
Karnataka, the birth place of the famed Udupi Cuisine has immense regional varieties, be it in the type of ingredients used or the cooking method. Among the South Indian Food, Karnataka food enjoys an equal share of vegetarian and non-vegetarian preparations. When Jowar and Bajra form the staple grains used, the number of main courses the land can claim is literally endless. Karnataka food is often deep colored due to the extensive use of chilies, however, is not very spicy or hot as compared to Andhra or Kerala food. More often, Karnataka people are known for their sweet tooth and hence the use of jaggery and other natural sweeteners in food is inevitable. Coastal Karnataka again has its affinity towards seafood, prepared and served as tasty main courses.
Kerala Food:
Kerala Food, considered as the tastiest of all South Indian Food is renowned for the use of coconut and coconut oil in the preparations. Whether it is the main course, the side dishes, desserts or sweets, coconut in its various forms like grated coconut, desiccated form, coconut milk etc is often a necessity in Kerala food. Kerala food is often liked for its hotness and the use of tamarind that gives the dishes a slightly tangy taste is well-admired. A variety of seafood is available in the coastal regions and the same is prepared in a numbers of ways; often each region has its own specialty with a distinct taste. Rice, raw or parboiled, often forms the staple food.
Tamil Food:
Tamil food, in its typical form is a combination of spicy and non spicy entries. So as with other South Indian states, rice is the staple food of Tamilians. Curd, buttermilk or yougurt is highly consumed, as it is seen as a heat-buster very essential in the hot weather condition prevailing all year long in several parts of Tamil Nadu. Spices like turmeric, fenugreek, citrus fruits like lemon, mango and also yogurt all adds to the slightly tangy and bitter taste that Tamil food is often known for. The ever popular Chettinad Cuisine has its root in Tamil Nadu. Extremely flavorful with the use of variety spices, Chettinad cuisine has non-vegetarian, especially meat as opposed to seafood, as its specialty; although there are vegetarian accompaniments that are equally tasty as the meat preparations.

South Indian Food is mainly prepared using the following cooking methods like steaming, slow-cooking, deep or shallow frying, sautéing, boiling etc. For the reason, majority of the dishes in South Indian cuisine are tagged healthy, save for a few sweets and snacks that are often fried in oil.
