Sicilian Pizza

Sicilian pizza, which also goes by the name of Sfincione or Sfinciuni (in Sicilian language), was first prepared in Palermo, Sicily. The one difference that the Sicilian pizza has with other varieties of pizzas is that in Sicilian pizza, the cheese comes under the sauce and not above it. To cook an authentic Sicilian pizza, you need pecorino cheese and anchovies. Throughout the United States, Sicilian pizza is typically sold as a square pie, which is an inch thick.
