Shrimp feta dishes are an excellent way of combining seafood with fresh feta cheese. Baked Shrimp in Tomato feta sauce is a very popular dish in Greece. It is also referred to as Garides me feta and it can be adapted into a range of different styles with the three basic ingredients of shrimp, tomato and feta cheese. The shelled shrimp is tossed into sautéed onions, garlic, parsley, oregano, white pepper, lemon juice, dill, salt and black pepper. Pureed tomatoes are added to the dish and the entire casserole is baked for 20 minutes. Feta cheese is sprinkled over the top and baked again for 5 minutes. Traditionally in Greece, ouzo, champagne, white wine, red wine, retsina, etc. may be added to this while it cooks. Vegetables like spinach, sautéed artichokes, courgettes, zucchini, potatoes, etc may be added to the dish. A slight variation is possible by adding boiled pasta or spaghetti to the dish and baking in the last ten minutes. To make a complete meal, steamed rice, quinoa, barley or couscous may be added to the same basic shrimp, feta, and tomato sauce dish.

 

Baked or sautéed shrimp with feta dip is usually served as an appetizer. The shrimp are tossed in butter and baked in a hot oven or sautéed in butter. These are then served with a sour cream, dill, oregano, feta cheese, and pepper dip. Shrimp, tomato feta polenta is a fusion dish that is commonly served as a complete meal in restaurants. Steamed tomatoes are pureed and cooked with cornmeal, salt, and pepper to make polenta. The shelled shrimps are then sautéed with salt and pepper and served on top of the tomato-infused polenta and feta cheese is grated on top of the dish before serving.
