Method of Preparation: To prepare sausage pasta, the pasta is cooked in boiling salted water till it is tender but still firm, after which it is drained and tossed in some olive oil. Garlic is sautéed in heated olive oil in a skillet, followed by addition of sausage, which is allowed to brown. Seasonings and herbs are added to this, and heavy cream is also added. The mixture is allowed to cook for a few minutes after which the cooked pasta is tossed with it and served with a garnish of grated cheese. Many recipes make use of wine and broth instead of cream while making the sauce.

- Pasta with Sausage, Mushrooms and Tomatoes: This dish is made by preparing a sauce by sautéing chopped onions, sliced mushrooms and herbs like basil and oregano, followed by the addition of wine which is allowed to simmer with the onion mushroom mixture. Crumbled sausage, which has been cooked by sautéing in heated oil, is added to this along with crushed tomatoes and puree, and the tomatoes are cooked till they soften. The sauce is seasoned with salt and pepper and then tossed with cooked pasta and topped with grated cheese.
- Pasta with Sausage and Greens: This version is prepared by inclusion of kale, broccoli rabe or any type of leafy greens, center stem removed, in chopped form as an ingredient. The greens are first cooked in chicken or vegetable stock, and then tossed with sausage sauce and cooked pasta to make the dish.
- Chicken Sausage Pasta: This version is prepared by addition of chicken thigh as an ingredient while preparing the sauce as per the basic sausage pasta recipe.
