Quiche Lorraine

Quiche Lorraine, a bacon and lardon filled pie, by far the most widely consumed quiche by the French, is characterized by absence of cheese in the filling. A wholesome snack or main course item, the Quiche Lorraine consists of heavy cream and eggs. The meat and cheese are spread on the pie crust, egg and cream mixture is poured over the filling and the pie is baked. The modern Quiche Lorraine does include cheese of the gruyere or emmental varieties.
