Puy Lentil

A small lentil which is slate green in color with a fine blue marbling is a puy lentil. They have a peppery flavor and do not lose their shape while cooking. Hence, they are considered best lentil by many. These lentils are grown in Le Puy region in France and therefore termed as puy lentil. They can be served as a starter or along with meat or fish. They can also be used as an ingredient in soups. Puy lentils do not waste away before a year when stored in a cool dry place.
