Pumpkin feta dishes are commonly cooked in the Mediterranean. Pumpkin has a mild sweet taste and it combines well with feta cheese. Pumpkin may be combined with tomatoes, garlic, spinach, onion, feta and parmesan cheese to form pies, tarts, pizza, casseroles, grills and bakes.

 

Preparation Overview of Pumpkin Feta

Pumpkin feta combinations can be prepared in many ways. Whole pumpkins are shelled, cored and cubed for the dish and combined with brined feta cheese. Crumbled or cubed feta cheese may be used in the recipe.  Traditionally, in Greece, a whole cored pumpkin is cooked with eggs, feta cheese, butter and milk to make a pie. The vegetable may also be cubed and simmered in tomato based gravy and sprinkled over with cheese. Another variation is grilling the pumpkin and serving it with feta cheese as a salad. A whole range of ingredients like parmesan cheese, onions, tomatoes, shallots, bay leaves etc. may be used.

Pumpkin feta combinations may be served hot or cold as casseroles, bakes, muffins, risottos, soups or salads. Usually, fresh toasted bread and butter are served alongside.
