Pumpkin dough is prepared by combining cooked pumpkin with wheat flour, baking powder or yeast, sugar and salt. Traditionally, pumpkin dough is used to make cakes, rolls, savory loaves and flatbreads. Unleavened pumpkin dough may be used to make gnocchi and flatbreads.  .

 

How to Make Pumpkin Dough?

Pumpkin dough is made by combining fresh pumpkin puree or paste with wheat dough. To add flavor to the dough, some chefs prefer to roast or grill the entire pumpkin, scoop out the seeds and use the roasted puree in pumpkin dough. The boiled, roasted or grilled pumpkin puree is then combined with wheat flour, yeast or baking powder, brown sugar, butter, salt cinnamon and ginger to make pumpkin dough. The dough is then baked into rolls, flatbreads, savory loaves, etc. Pumpkin dough that is made with unleavened flour is used to make gnocchi and flatbreads

Pumpkin pizzas are the most popular way of using pumpkin dough. The dough is rolled out and then sprinkled with toppings like sausage, minced chicken, poblano peppers, mozzarella cheese, parmesan cheese and other toppings before being baked.

 

Pumpkin Gnocchi with fried sage and spinach pesto is a popular vegetarian dish. The pumpkin dough  is made by combining roasted butter pumpkin with ground nutmeg, plain flour, almonds, fresh sage leaves, butter, salt and pepper. The dough is shaped into small oblongs and then simmered in water. The oblongs are served with a spinach, parmesan, almond and cream pesto.

 

Cinnamon swirl pumpkin rolls, breads and cupcakes are made by roasting the pumpkin whole. The roasted pumpkin dough is leavened with yeast. The dough is shaped into a roll and stuffed with a cinnamon, ginger, raisin, and cranberry filling. The rolls are baked and then drizzled with a glaze made from confectioner’s sugar, butter and milk.

 

Spiced pumpkin cookies and biscuits are made by combining shortening, with flour, spices and canned pumpkin puree to make spiced pumpkin dough. The dough is then baked into cookies and biscuits
