Pound Cake

Pound cake is a type of cake traditionally made with a pound of each of the four ingredients: flour, butter, eggs, and sugar. The traditional recipe makes a cake much larger than most families can consume, and so the quantity is often changed to suit the size of the cake that is desired. Pound cakes are traditional cakes commonly made from the times of the ancestors of the present-day British. The name (Pound Cake) comes from the fact that the original pound cakes contained one pound each of butter, sugar, eggs, and flour. A Pound Cake is a rich, dense cake. It can be plain, or have flavoring extracts or citrus rind added to it.
 
Pound Cake Recipes - History
Pound Cake appears to have originated in the 1700s in England. By the mid-1800s, Pound Cake recipes started to add liquids, and in the 1900s, baking powder was added to the recipes. And though butter, eggs, flour and sugar are still used, the proportions have been adjusted to make the cake less heavy. The name 'pound' was given to this cake because the original recipes contained one pound of butter, one pound of sugar, one pound of eggs, and one pound of flour. No leaveners were used other than the air whipped into the batter. In the days when many people couldn't read, this simple convention made it simple to remember recipes. While the pound cakes we make today often have different proportions from the original, they are still wonderfully rich, moist, and buttery with a lovely golden brown crust. As long as the ratio is preserved, the resulting cake will be identical to that using the traditional recipe. Hence, any cake made with a 1:1:1:1 ratio of flour, butter, eggs, and sugar is also called a pound cake or lbs cake, even if the quantity used is smaller or larger than an actual pound.

There are numerous variations on the traditional pound cake, with certain countries and regions having distinctive styles. These can include the addition of flavoring agents (such as vanilla extract or almond extract) or dried fruit such as currants or craisins, as well as alterations to the original recipe to change the characteristics of the resulting pound cake. For instance, baking soda or baking powder may be incorporated to induce leavening during baking, resulting in a less dense pound cake. A cooking oil (typically a vegetable oil) is sometimes substituted for some or all of the butter, which is intended to produce a more moist cake. "Sour cream pound cake" is a popular variation in the United States, which involves the substitution of sour cream for some of the butter, which also is intended to produce a more moist cake with a pleasantly tangy flavor. Some of these variations may drastically change the texture and flavor of the pound cake, but the name pound cake is often still used. Traditional British Pound Cake recipes always include dried fruits (usually currants or raisins) and often also a bit of glaze cherries, making English pound cake more of a fruit cake than its American counterpart - although the basic cake recipe is the same.

This cake is surely a delight to eat but along with it comes its own set of cons. The calorie count, as we all know it, is high in cakes and pound cake is no different. Having butter, flour, eggs, sugar etc makes it stand on the higher side of the calorie count.

A Pound cake is so very versatile. It can be served as a simple, unadorned dessert with a bowl of fresh fruit. Another way is my favorite: serving the cake lightly toasted with a scoop of ice cream on the side. You can also brush with jam and top with orange peel or drizzle glaze or fudge sauce over when serving. Plus, for decorating, Fondant makes a perfect cover for the cake, because it is sturdy and will not crush under its weight and keeps moist for a longer period of time because of its high fat content.

The pound cake recipe is officially called double-vanilla pound cake. Pound cake cupcakes are rich and dense - but, most importantly, they are versatile. Like their full-sized cousins, pound cake cupcakes can be served with different toppings. Pound cakes can be used to make wonderful triffles. All trifles seem to have whipped cream, but the cream may be of the artificial topping variety. For the typical American Pound cake, the proportions of those four essential ingredients vary with additions such as leavening (baking powder or baking soda). The cake's ingredients are frequently augmented or replaced by sour cream, egg yolks, cream and a variety of flavorings from coconut, nuts, raisins and dried fruit. It can also be made from a mix or you can find ready-made cakes among the frozen foods in your supermarket.
