Papaya salad is made using fresh or raw papayas. When fresh papayas are used they are combined with other fruits in a tangy lime and sugar dressing. Raw papaya salad is typical to Thailand and is also known as som tam. The salad is often made in 4 distinct flavors; spicy, salty, sweet and sour.

A traditional Som Tam is made using certain authentic ingredients like fish sauce, chili, palm sugar, garlic, lime, local black crabs in a brine, shrimp paste, padaek (pickled fish), tomatoes, hog plums and Yardlong beans. Variations of this salad around the world include crushed peanuts and the salad is often served with plain rice or pork rinds.
