Mutton Rice is typically a rich mutton based specialty rice preparation that has a number of regional variations to it. The use of diverse ingredients and different cooking methods culminates in some satisfying mutton rice meals that people keep going back to. 

 

SHOLA

 

Shola is a hearty dish belonging to the Pakistani Cuisine which combines a host of vegetables, chopped or ground mutton and also includes spilt moong dal and rice. These are seasoned with a powerful native spice mix and Indian garam masala powder and prepared by the method of slow cooking. 

 

JAMAICAN MUTTON CURRY RICE

 

The Jamaican Mutton curry rice comprises an unusual combination of mutton with vegetables like onion, garlic, sweet potatoes, cooked in reduced coconut milk and chicken stock. It is seasoned with bay leaves, thyme, coriander and special curry powder (containing allspice, turmeric, nutmeg, black pepper, cumin and coriander). Rice cooked with kidney beans, herbs and spices is finally mixed with the mutton curry to create a flavorful, satiating meal of Jamaican Mutton Curry Rice.  

 

INDIAN MUTTON RICE PULAO

 

Traditional Indian Mutton pulao is made by cooking rice separately with whole spices and salt.  Mutton is cooked along with whole spices, ginger, garlic green chillies and sliced onions. Yoghurt is added to provide a base in which the mutton cooks and imbibes flavors of all the spices. The rice is gently mixed into the mutton gravy to ensure uniform distribution.   Fresh cilantro and saffron milk or rose water are used as garnish to finish this rich dish.

Mutton is a high fat ingredient; hence lean meat must be used in order to lower total and saturated fat and cholesterol levels. Mutton is a rich source of Iron and Vitamin B12 and hence these rice dishes would benefit anemics. Mutton is also a good source of Niacin, Phosphorus and Zinc, and a very rich source of Proteins and Selenium required in numerous physiological processes.
