Mutton, also used interchangeably with goat meat, is the term referred to the type of meat taken from the matured sheep, which is over two years of age; the meat of the young sheep is often referred to as lamb meat. For the reason that the meat is of an older sheep, mutton has richer flavor yet tends to be tough and hence is required to be cooked well before eating. This is why mutton always takes a long and slow cooking method.
