Mushroom Pesto

Mushroom pesto commonly refers to a savory sauce prepared by blending mushrooms with other ingredients often consisting of basil, pine nuts, cheese, olive oil, and seasonings. The mushroom based pesto can be served over toasted bread or with various types of pastas like penne pasta and lasagna. Mushroom pesto may also refer to a dish, where mushroom caps are filled with basil pesto. The variations of the savory sauce can also be explained in terms of use of distinct mushroom type, viz. Portobello mushrooms, button mushrooms, porcini mushrooms, and cremini mushrooms.  


Popular Mushroom Pesto Recipes

Among several mushroom pesto based dishes, a few have been discussed below:


  • Pesto stuffed mushrooms- the mushroom pesto recipe for this dish suggests filling mushroom caps with basil pesto and breadcrumbs mixture, and baking them in oven after sprinkling mozzarella cheese on top. The basil pesto for this dish is a blend of basil, garlic, parmesan cheese, olive oil, pine nuts, salt, and pepper.   


  • Mushroom based pesto with penne- the pesto for penne pasta is prepared with cremini or Portobello mushrooms. Finely chopped mushrooms are sautéed in olive oil, before stirring in Worcestershire sauce, sherry, pepper, and salt. This mushroom mix is blended along with pine nuts, garlic, parsley, parmesan cheese, and olive oil until finely minced and tossed with boiled penne pasta.   


  • Mushroom pesto crostini- the mushroom pesto recipe for this dish suggests blending together button mushrooms, porcini mushrooms, garlic, parsley, walnuts, olive oil, parmesan cheese, pepper, and salt. This mushroom based pesto is served over crostini (popular Italian appetizer referring to olive oil toasted bread). Porcini mushrooms are placed in hot water until tender, and then used in the pesto.


Storing Mushroom Based Pesto

It is suggested to store mushroom based pesto in refrigerator after covering it with a plastic wrap so as to prevent the color of the mushrooms from fading away. The pesto can be stored in the refrigerator for around a week.
