Moroccan raw carrot salad can be prepared by tossing coarsely grated raw carrots, parsley, or cilantro and more choice of vegetables with a dressing of olive oil mixed with lime juice, powdered cumin, minced garlic, powdered cinnamon, salt, chili paste or chilies. This salad has to either be refrigerated for 2 hours or be left for two days for the flavors to brew into the carrots.
