Ingredients: The ingredients required for making Mexican bean soup include kidney beans, chopped carrots, zucchini, peas or any other vegetables, coriander leaves, cumin seeds, finely chopped garlic and onions, olive oil, dried herbs like oregano and thyme, red chili flakes, red chili powder, chopped tomato, tomato puree and salt. Canned kidney beans can be used instead of soaked ones. Using canned beans can be convenient, but canned beans are known to develop a compound BPA (Bisphenol A) in the beans, which is known to cause increased levels of fat tissue and certain health risks. Method of Preparation: As per the Mexican bean soup recipe, kidney beans are first soaked overnight so that they soften, after which they are cooked in the pressure cooker and then mashed partially.
