Hyderabadi dum biryani is a flavored rice dish. It is a specialty of Indian cuisine where basmati rice is cooked with layers of marinated meat in a large, heavy bottomed pot on a low flame. This process of cooking is known as “Dum” and the Hyderabad dum biryani derives its flavor from this type of cooking style. Generally a dahi chutni or a salad consisting of onion, carrot, cucumber and lemon wedges is served along with the Hyderabadi dum biryani.
