Homemade cheddar cheese is a pale yellow to orange colored cheese which is processed at home.The point of difference between homemade cheddar cheese and its commercial variant lies in its taste which is partly due to the method of preparation and aging.  Pasteurized cow’s milk or goat milk are used in the cheese preparation.  The color of the cheese depends on the handling of the combining ingredients. The cheese gains its identity from a unique manufacturing step known as cheddaring the curd is mixed with salt after heating.  The cheese is normally aged between three months to thirty months depending on the requirement.

 

Origin of Homemade Cheddar Cheese
The first recorded mention of the cheese can be traced back to 1170 AD, when King Henry II mentioned of purchasing this cheese. This cheese derives its name from the cheddar village near the Somerset region of England where this cheese is prepared in abundance. The cheese was modernized to its present form by Joseph Harding. Harding showed the world how the quality of the home prepared cheddar can be enhanced. His son shared the secret of scientific cheese making with the Australians. Today the cheese is mainly produced in the countries like Australia, New Zealand, USA and South Africa. The quality of the cheese varies at these places according to the manufacturing and aging techniques employed.
