Gujiya

 

Gujiya is a sweet prepared especially during the festivals of Holi and Diwali. This traditional sweet is a speciality of North India and is savoured by everyone during this festive occasion.

The sweet has been popular as a Holi and Diawali sweet since the 19th century. Previously, all  North Indian women used to come together to prepare the sweets. The traditional gujiya recipe is tedious and time consuming to follow. Nowadays, however people do not have so much time and thus this sweet can be bought from any sweet shop before the festival. This sweet is no longer restricted to North India, but is available across India.

 

 Gujiya Recipe Overivew

Gujiya has a coating made of flour and the stuffing is usually made of nuts, raisins, khoya and cardamom powder. It is deep-fried and dipped in thick sugar syrup. The usage of desi ghee is always recommended to prepare the dough as well as to fry the sweet.
 

The sweet is usually prepared several days before the occasion. As the gujiya is stuffed with khoya, it can be preserved for a long time.

 

Serving 

Gujiya is usually served at room temperature. However it can also be served cold. Hot gujiya is not preferred as the sugar syrup does not get a chance to penetrate the outer layer of this delicacy.

This popular sweet can be served any time of the day, on its own or along with some other accompaniments. Usually it is relished with some savoury snacks and a cup of hot tea.

 

Types

With the passing of time variations of gujiya have emerged. All of them follow the traditional gujiya recipe but additions and alterations have been done to suit the local taste.
• In some places this sweet has a filling of coconut instead of khoya. Again, sometimes the khoya and coconut are mixed in equal quantity to prepare the stuffing.
• Sooji is added to the dough in some parts of India. This makes the sweet crispier.
• To avoid the high sugar content some prefer not to dip the sweet in sugar syrup but to add sugar to the dough itself.
• Some people prefer adding camphor to the filling.
• A gujiya is traditionally folded half circle in shape. But nowadays, the sweet can be found in various shapes like that of a flower, square or layered. The filling however remains the same.

According to the standard diet plan, snacks with 250 cal can be taken. 2 pieces of gujiya can be eaten for evening snacks.

  • Gujiya is traditionally fried in ghee. A healthier alternative is to bake it. This will reduce the fat percentage of the snack.
  • Refined flour is used to make the dough. It can be partially replaced with semolina or wheat flour. Adding semolina will not only add dietary fiber but also make it crispier.
  • Khoya in the filling can be replaced low fat milk khoya.
