Grilled Lamb

 

Grilled Lamb is a popular dish of lamb (young sheep) that is cooked by grilling it in a grill pan, on a grill, or over charcoal or wood fire. Usually, lamb shoulder is the part used for grilling due to its flavorful meat; however lamb ribs or chops can also be used for grilling purposes. The extra fat from the lamb meat is trimmed off, before it is cooked. The variations of the dish are often explained in terms of use of distinct ingredients for preparing the grilled dish and use of different lamb cut. A few recipes suggest marinating lamb prior to the grilling process, so as to enhance the flavor of the grilled meat.

 

Ingredients and Preparation

Grilled lamb is prepared in a very less time span as the meat used in the preparation of the dish is very soft due to being obtained from young sheep. The lamb cut is usually rubbed with a mix of several ingredients viz. garlic, oregano, thyme, cayenne pepper, cumin, etc, and then grilled over fire. The lamb cut is frequently basted with fat during the grilling process until dark brown and tender.

  • Grilled lamb chops- this grilled lamb recipe suggests rubbing a paste made of garlic, thyme, rosemary, salt, cayenne pepper, and olive oil on lamb chops, and grilling them in a grill pan after allowing them to marinade in a refrigerator for around an hour.

 

  • Grilled leg of lamb- boneless lamb leg is butter-flied and then brushed all over with a paste made by blending together garlic, olive oil, Dijon mustard, dried oregano, dried rosemary, dried spearmint, salt, pepper, apple cider vinegar, and lemon zest. The lamb leg is then wrapped in a plastic wrap and refrigerated overnight before being grilled. 

 

  • Grilled lamb shoulder- boneless lamb shoulder is flattened and marinated in a mix of olive oil, white wine, lemon juice, parsley, onion, bay leaf, garlic, thyme, rosemary, salt, basil, and pepper, for around four hours in refrigerator, and then grilled over high heat, basting frequently with already reserved marinade.
