Fusilli

Fusilli pasta is long spiral, spring shaped pasta. The term fusilli is assumed to be taken from fusile old-fashioned word meaning rifle. In Italian word fusilli also refers to small spindles.

 

It is believed that the noodles were first invented in China, and a Venetian trader named Marco Polo, took some of the samples of the noodle on his way back. There is also a story, which says that the discovery done by Marco was in fact a rediscovery of noodles which were already known to Italy in Roman and Etruscan times.  

 

There are many forms of pasta, most of which can be categorized as Italian-style or oriental. Italian-style pasta is primarily wheat based while oriental pastas are prepared from a variety of flours and starches and they often take a form of long strands or strips of pasta. Italian pastas are mostly made of durum wheat flour.

Fusilli is made using plain flour or whole wheat flour, same as other pastas. Fusilli can be made into different colors, by adding various ingredients in dough which can also enhance the flavor of pasta. The ingredients such as beetroot to give red color, cuttlefish ink to give  black or spinach to give green color, can be added to pasta dough.

 

Fusilli is commonly offered with thick sauces. Fusilli is often confused with other pasta called rotini. But the difference between two pastas is fusilli is prepared of twisted ply of pasta into little spiral shapes, on the other hand rotini pasta is made up of flat pastas which are twisted. There is a similar type of pasta know as Fusilli Bucatini, which is prepared with empty tube like pasta which are swirled into corkscrew or springs. Fusilli pasta is not hollow pasta like penne or macaroni and so it cannot hold the sauce. Fusilli pasta soak up the sauce and enhances the flavor. Also the spiral shape helps the pasta to hold the sauce. It is very popular pasta because of its extraordinary taste.
